Manuka honey and antibacterial activity – what is all the fuss about?
Most honeys have healing properties to some extent. In the past, honey’s antibacterial property was attributed to its ability to produce low levels of hydrogen peroxide in a slow-release manner. What makes manuka honey different from other types of honey is its non-peroxide activity (NPA), which exists in addition to its ability to produce hydrogen peroxide.
Dr Peter Molan, a biochemist at Waikato University, has been researching the healing properties of honey since 1981. Dr Molan identified that honey produced from the New Zealand manuka bush (manuka honey) has a NPA level that is not found in other honeys. The NPA levels of a manuka honey determine how strong and potent the active components within the manuka honey are at fighting bacteria.
It’s generally accepted that manuka honey with a NPA level of 10+ or higher is suitable for medical use. These numbers are used in comparison to a solution with the equivalent antibacterial level of phenol. For example, manuka honey with a NPA level of 10+ has the same antibacterial activity against Staphylococcus aureus bacteria as a 10%w/v phenol solution (after the peroxide activity has been removed).
What is UMF?
UMF stands for Unique Manuka Factor and is a registered trade mark of the Active Manuka Honey Association (AMHA).
The UMF test has been developed to identify the Non-Peroxide Activity level in manuka honey. This means that honey of UMF 10+ is also NPA 10+. The UMF initials and Unique Manuka Factor are both trademarks of AMHA and only those manufacturers that meet certain standards of manufacture and pay a licensing fee are permitted to use the UMF logo.
What is MGO?
Methylglyoxal, also known as MG or MGO is one of the active components primarily responsible for the non-peroxide antibacterial action of manuka honey. The discovery that methylglyoxal is one of manuka honey’s key “active ingredients” was made in 2008 by Professor Thomas Henle, head of the Institute of Food Chemistry at the Technical University of Dresden (Germany).
