  1. Begin by blooming the gelatin. Sprinkle the gelatin powder over 1 cup of cold water. Stir to combine and set aside until gelatin dissolves into the liquid.
  2. In a medium-large pot, combine the remaining water with freshly squeezed lime, lemon, or orange juice (or a combination) and honey. Heat gently until just simmering.
  3. Remove the pot from heat. Add the bloomed gelatin mixture, quickly whisking until fully dissolved.
  4. Stir in the vitamin C and collagen powder until the mixture is smooth and glossy.
  5. Strain the mixture into a large dish or your preferred gummy molds through a sieve.
  6. Refrigerate the gummies until completely set.
  7. Store the gummies in the fridge and consume within 10 days.
