What is offal?
Offal is collectively the organ meats of an animal, including the heart, liver, kidneys, spleen and the stomach lining (known as tripe). These were some of the most highly prized parts of an animal by our Paleolithic ancestors after they transitioned from scavengers to hunters over 2 million years ago. The nutrient-rich addition of offal to the human diet led to a significant increase in brain volume due to the extremely high nutrient density found in organ meats.
The organs of wild-caught and responsibly raised animals contains all the most bioavailable vitamins and minerals humans need to thrive. Following a “like-for-like” philosophy, organ meats support the healthy functioning of those same organs in our bodies.
Liver: The most nutrient dense of all, and an excellent source of vitamins A, C, D, B12 and folate, along with minerals zinc, iron, selenium and copper. Liver organ meat supports immune health, gut function, cardiovascular and reproductive systems, healthy skin, and strong bones. Liver contains high levels of vitamin B12 which is essential for supporting energy, detoxification processes, metabolism and red blood cells production.
Kidneys: high in the enzyme diamine oxidase (DAO) which supports the body’s response to allergens and food sensitivities. A nutrient-dense organ, kidney also provides the rare amino acid L-ergothioneine which supports healthy kidney function.
Heart: an excellent source of coq10, vitamins B12, collagen, elastin and other proteins and enzymes found in heart tissue.
