What are Essential Oils?
Essential Oils are the fragrant essence of plants. Sometimes also called volatile oils, they are highly susceptible to breaking down quickly, making them sensitive to high heat and oxidation.
Not all plants contain Essential Oils, however it is easy to find ones that do – if your herb or plant is highly fragranced then chances are that what you're inhaling are essential oils. The purpose of Essential Oils in plants is to attract beneficial insects and bees for pollination, and to provide protection for the plant from unwanted pests, bugs, and fungi.
Almost all the culinary herbs that are used in the kitchen contain Essential Oils, and you might even have a few baking products in the pantry that have been flavoured with an Essential Oil like peppermint, or almond (marzipan).
