Keto Bake Mix Pancake & Waffle

Almond Meal, Lupin Flour, Coconut Flour, Tapioca Flour, Soluble Corn Fibre, Psyllium, Baking Powder.

To make 3 pancakes: 1/2 cup (60g) Pancake Mix, 80ml (4 tablespoons) water, add 1x egg.

1. Place the water and egg into a bowl and whisk together.
2. Add Pancake Mix and whisk until smooth.
3. Allow to sit for 2-3 minutes to thicken.
4. Preheat a greased non-stick fry pan to a medium heat. Spoon the batter into the pan to make 3 pancakes, each approximately 1cm thick. Reduce heat to low, cover it with a lid and cook for a further 1-2 minutes without lid.
5. Serve immediately with your favourite low carb toppings. Or cool and store in a refrigerator for 24hours before reheating to serve.

To make Waffles: (makes 2-3 depending on your waffle iron) Make the batter as above. Grease and reheat a waffle iron. Pour in one third of the batter and cook for 4-5 minutes, or until the top is crunchy and golden.
